2nd Place Best Cake at the 2011 Ozark Empire Fair
½ cup butter, softened
½ cup oil
2 cups sugar
5 eggs, separated
1 cup buttermilk
1 teaspoon baking soda
2 cups all purpose flour, sifted
1 teaspoon Black Walnut Extract
1 ½ cups chopped black walnuts
6 ounces frozen coconut, thawed
½ teaspoon cream of tarter
Cream Cheese Frosting
1 stick of butter, softened
1 8 ounce package cream cheese
1 lb box powdered sugar
1 teaspoon vanilla extract
Preheat oven to 350 degrees. Prepare 2 or 3 9-inch pans by greasing bottom and sides and lining with parchment paper.
Cream butter and oil together. Add sugar and beat well. Add egg yolks and beat well. Mix buttermilk and baking soda, stir until soda dissolves. Add flour to mixture alternating with buttermilk. Stir in vanilla, add walnuts and coconut, stir well. Beat egg whites with cream of tartar until stiff peaks form. Fold egg whites into batter. Pour batter into prepared cake pans. Bake for 30 or 40 minutes or until toothpick inserted in center comes out clean. Remove from oven and cool in pans for 10 minutes then turn out on wire racks to cool completely.
Cream Cheese Frosting:
Blend butter and cream cheese together. Add powdered sugar and vanilla. Mix well. Spread on layers and top of cake. Garnish with more black walnuts.
