Black Walnut Apple Cake I


1 cup unsalted butter
2 cups sugar
3 eggs
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 cup sour cream
1 teaspoon vanilla
1 teaspoon black walnut flavoring

Apple-Black Walnut filling:
1 cup apples, peeled and diced
1 cup chopped black walnuts
2 tablespoons brown sugar
2 teaspoon cinnamon


Cream butter and sugar, add eggs and beat well. Stir vanilla and black walnut flavoring into sour cream, and then add to butter mixture. Sift flour with salt and baking powder and add to butter mixture. Beat together until well blended. Pour half of mixture into greased and floured bundt pan.

Apple-Black Walnut filling:
Mix together and spread apple filling over top. Cover with remaining batter. Bake 350� for approximately 50 minutes. For dark pan, bake 325� for 55 minutes or until cake test done. Dust with powdered sugar if desired.
